BUFFALO MOZZARELLA FROM CAMPANIA REGION D.O.P.
Among the artisanal products, the most known and widespread Italian cheese is the Mozzarella di bufala Campana D.O.P (Denomination Origin Protect). However only the one obtained with carefully selected buffalo milk following the traditional technique can be identified as an authentic mozzarella di Bufala Campana.
Since its appearance in the DOP area, the Italian water-buffalo has not been affected by any other races and is rare example of genetic purity. This has rightly contributed to its specific denomination “Mediterranean Italian Buffalo”. The gestation period lasts around 10 months and the laction lasts 270 days. Soilages, ensilages, mineral and vitamin supplements are the basis of its nutrition.
